Pass it on

Shrimp and Avocado with an Old-school Marie Rose Sauce (12 minutes) - Jamie's Food Revolution



serves 2

1 or 2 ripe avocados
1 or 2 large handfuls of cress or alfalfa
all purpose flour
1/2 pound large peeled and cleaned shrimp
olive oil
2 cloves garlic
1 heaped teaspoon of paprika

For Marie Rose Sauce
1/4 cup mayonnaise
2 teaspoons ketchup
1 teaspoon Worcestershire sauce
1 teaspoon whiskey
1 lemon
sea salt and freshly ground black pepper

Cut, pit and wedge your avocado.

In a bowl put a handful or two of flour. Toss shrimp in here until covered with flour.

For sauce throw all ingredients except lemon and salt/pepper in bowl. Squeeze in half lemon. Mix. Add salt/pepper to taste. Wedge rest of lemon for serving.

Grab large frying pan. High heat. When hot add two lugs of olive oil. Bash and toss cloves of garlic in there too. Immediately follow with flour covered shrimp. Toss them well to cover with oil. Count to 10 and then add a pinch salt/pepper and paprika for color. Keep tossing shrimp and cook in single layer for 3-4 minutes until crisp and golden.

Divide avocado between places and then lay cress or alfalfa over them. Place shrimp next to them and splash avocado with Maria Rose sauce. Little drizzle of extra virgin olive oil and a sprinkle of paprika. Serve with lemon wedges.
