Sarah's Couscous
While we were doing things she whipped together this really simple quick meal. Her confession is that it is much much better when it has chilled in the chiller overnight (it is also the only way that her husband will eat it)
Ingredients:
Couscous (boxed, flavored or plain)
Water and olive oil ... for making the couscous
Black beans (one can)
Cucumber (1 or more cubed)
Roma tomatoes (2 or more - cubed)
Onion (1/2 of one diced - my addition)
Salt, pepper and whatever other spices tickle your fancy
Boil water and olive oil to directions on box. Make as much couscous as you know you will eat. I am one who loves the pine nut couscous but the choice is really yours. Follow box directions and add couscous, remove from heat and cover ... let stand for at least 5 minutes.
Meanwhile chop up everything else, drain can of black beans. Notice that there are no quantities as it depends on how much vegetable you like. I know that as I continue to play with this I will use many other vegetables in and out until I come up with one that really works ... and then change it up again.
Then throw all ingredients together in a big bowl. Gently mix and add all those flavorings you love. Eat right away or chill for a while and enjoy. Works great with chicken, fish or just by itself.
