With the fresh and light taste of yogurt and cucumbers this salad of Greek descent is sure to please the pallet.

Ingredients
- 1 english cucmber
- salt to taste
- 2 Cups drained yogurt
- 2 1/2 garlic cloves, mashed
- 3 TBSP mint, chopped and fresh
- freshly ground pepper, to taste
Cooking Instructions
- Toss the cucumber with a generous amount of salt and drain in a colander in the sink for 15 minutes. Rinse and drain on paper towels.
- Mix together the yogurt, garlic, mint, and salt and pepper to taste. Stir in the cucumber. Adjust seasonings and serve.
